Mutton Curry Recipe

Ingredients of Mutton Curry
- 1 kg boneless lamb -(cut into small pieces)
- 1/2 cup vegetable oil
- 3 cups finely sliced onions
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 3 tsp turmeric powder
- 1 1/2 tsp red cayenne pepper
- 3 tsp Paprika
- 1 tsp cinnamon – (ground)
- 2 1/2 cups hot water
For marinating :-
- 1/4 cup vegetable oil
- 1/4 cup cider vinegar
- 3 tbsp Tamarind pulp
- Salt – according to taste
For the curry:-
- 2 tbsp vegetable oil
- 1 White onion(big)
- 6 nos of garlic pods
- 2 tbsp fresh ginger
HOW TO PREPARE
1) Before making the dish, wash the lamb, and then cut the lamb into small pieces.
2)Marinate it with oil, tamarind, vinegar, and salt at room temperature for 4-5 hrs.
3) Add 2 tbsp of oil, garlic, onion, and ginger in a blender to make a fine pasty puree.
4)Heat 1/2 cup of oil in a large skillet on a medium-high flame.
5)Add finely sliced onions and saute, until they are caramel brown. Stirring constantly to avoid burning.
6)Add the puree and reduce the heat.
8)Add cumin, red pepper, mustard, turmeric, paprika, and cinnamon.
9)When the spices begin to sizzle and turn dark(about 15-16 seconds), add the lamb and bones(without the marinade).
Reserve the marinade.
10)Cook until just seared for about 10-15 mins.
11)Add water to the marinade to make 2 1/2 cups of liquid.
12)Add it into the pan and bring it to a boil.
13)Lower the heat and simmer, partially covered, until meat is very tender for about 30 mins.
